Why do I love this recipe so much? Well, its refined sugar free, dairy and gluten free, packed with Omega 3 essential amazingness & does not involve cooking or cleaning up ... Whats not to love ?! PLUS the delicious aroma of coconut and mango is reminiscent of all things summer, always an added bonus in my book!
Chia means "strength" in the Mayan language, packed with Omega-3 essential fats, protein, fibre, antioxidants, vitamins and minerals this little treasure is kind to our digestive system, great for our skin and a powerful anti-inflammatory. Grab a mason jar & let's get cooking (more like mixing in this case!).
Ingredients:
1 cup coconut milk (or any plant based milk)
1/2 tspn Maple syrup
1/2 tspn ground cinnamon
Topping:
1 mango cheek dicedLittle handful of toasted organic shredded coconut
12 activated almonds chopped (optional)
Serves: 2
Steps:
- Combine Chia Seeds, milk, maple syrup and cinnamon in a glass jar, stir, close tight and refrigerate for 4 hours or overnight.
- Before serving, top with some toasted coconut, fresh mango and activated almonds.
Get creative as you like with toppings! You may like to try sliced banana and blueberries for an extra dose of antioxidants and potassium.
To help save you time in the morning, grab a couple of jars and prep the puddings the night before - breakfast will be as easy as grabbing the jar out of the fridge the next morning on your way out.
Puddings can be stored in the fridge for up to four days, making these little pots of goodness super easy to get organised ... Meal prep TICK !
